F1 and F2, the two stages that decide your kombucha

F1 (first fermentation) is the open-air brew where your SCOBY and starter turn sweet tea tart. It usually runs 7โ€“14 days depending on temperature; warmer rooms ferment faster. You taste it daily toward the end and pull it when it hits that sweet-tart balance you like โ€” too short and it's syrupy, too long and it's sharp and vinegary.

F2 (second fermentation) is the sealed, bottled stage where you add fruit, juice or ginger and let it build carbonation, typically 2โ€“5 days. This is where fizz and flavor happen, and it's also where bottles can over-pressurize if you forget about them. Tracking the F2 start date is the simplest way to avoid a sticky kitchen and get consistent carbonation.
